This is one of my favorite Southern meals with juicy chicken fried steak topped with a deliciously creamy gravy. Serve this with mashed potatoes and your favorite green veggies for a satisfying meal perfect for your entire family!

INGREDIENTS :

  • 2 eggs
  • 4 cube steaks (about 1/3 pound each)
  • 1 c. vegetable oil
  • 2 tablespoons TABASCO® Sauce (original)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon baking soda
  • 1 1/2 c. buttermilk
  • 1 1/2 c. all-purpose flour
  • 2 teaspoons fresh ground black pepper, divided
  • 2 teaspoons kosher salt or sea salt, divided

Chicken Fried Steak Gravy:

  • 4 tablespoons flour
  • 1/2 c. heavy whipping cream
  • 2 to 3 c. whole milk
  • salt and pepper to taste
  • 4 tablespoons grease

DIRECTIONS :

Step 1: Place 1 tsp black pepper, 1 tsp salt, paprika, onion powder, garlic powder, baking soda, and baking powder in a shallow bowl. Mix well and set aside.

Step 2: Combine the buttermilk, TABASCO® Sauce, and eggs in another bowl and set aside.

Step 3: Using a paper towel, pat dries the cube steaks. Sprinkle with 1 tsp each salt and pepper. Allow the steaks to sit for about 5 minutes, then pat the cubes dry again using a paper towel.

Step 4: In the flour mixture, dredge the cube steaks. Shake the excess off and coat in the buttermilk-egg mixture. Allow the excess to drip off, then dredge again in the flour mixture, then shake off the excess.

Step 5: On a sheet pan or metal rack, place the breaded cube steaks and press the rest of the flour mixture into the cubes. Ensure that the whole steak is fully coated. Then, allow to sit for about 10 minutes.

Step 6: Prepare the oven. Preheat it to 225 to 250 degrees F.

Step 7: In a heavy skillet or large cast-iron skillet, heat the vegetable oil over medium-high heat. Make sure to fill the skillet to about 1/4-inch deep.

Step 8: Once the oil reached 320 to 340 degrees F, add two steaks into the pan. Fry the steaks for about 3 to 4 minutes on both sides until golden brown, flipping the steaks once.

Step 9: Transfer the steaks on paper towels to drain and keep warm in the preheated oven. Then, adjust the heat to a medium.

Chicken Fried Steak Gravy:

Step 10: Into a heat-safe bowl or glass measuring cup, pour the rest of the grease. There is no need to scrape the skillet clean.

Step 11: To the hot skillet, add 4 tbsp of the grease. Stir in the flour and mix constantly for about 2 to 3 minutes or until the flour is nice and golden brown.

Step 12: Mix the cream and milk, then drizzle about 2 1/2 cups of this into the skillet while stirring constantly.

Step 13: While stirring, bring the gravy to a simmer and continue to cook for another 5 to 7 minutes until the gravy is smooth and creamy. You can add a bit of milk if the gravy turned out too thick. To taste, season with salt and pepper.

Step 14: When done, remove from the heat. Serve the chicken fried steak right away with gravy, mashed potatoes, and your preferred green veggies. Enjoy!
