These cookies are super legit! I never thought that Oatmeal make such amazing cookies! This recipe is a must-try! Give it a try and enjoy!

INGREDIENTS :

  • ¾ cup all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup butter softened
  • ½ cup peanut butter
  • ½ cup white sugar
  • ½ cup packed light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup quick-cooking oats
  • 3 tablespoons butter, softened
  • 1 cup confectioners’ sugar
  • ½ cup smooth peanut butter
  • 2 ½ tablespoons heavy whipping cream

DIRECTIONS :

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: In a large mixing bowl, add 1/2 cup of peanut butter, brown sugar, white sugar, 1/2 cup of butter, vanilla, and egg. Beat until well mixed.

Step 3: In another mixing bowl, add the flour, baking powder, salt, and baking soda. Stir until well mixed.

Step 4: Transfer the flour mixture into the creamed mixture and stir until well blended.

Step 5: Add the oatmeal and stir until well combined.

Step 6: Spoon the batter into a baking sheet. Press them lightly to become 1/4-inch thick cookies.

Step 7: Place the baking sheet inside the preheated and bake for 10 minutes or until golden brown.

How To Make the Filling:

Step 1: In a small mixing bowl, add 3 tablespoons of butter, 1/2 cup smooth peanut butter, confectioners’ sugar, and cream. Beat until well mixed and creamy.

Step 2: Spread the filling over half of the warm cookies and top each with the other half of the cookies.
