This Lo Mein noodle is utterly lip-smacking good! The sauce is perfect, and with the veggies, you’ll have a delicious noodle from heaven!

INGREDIENTS :

  • 300 grams / 10 ounces chicken or other protein , sliced 0.5cm / 1/5-inch thick
  • 1.5 tablespoons vegetable or peanut oil
  • 1/2 onion, finely sliced
  • 2 garlic cloves, finely minced
  • 2 medium carrots , peeled and cut into 4 x 0.75cm / 1.75 x 1/3-inch batons
  • 6 green onions, cut into 5 cm/2-inch lengths
  • 1 large red capsicum/bell pepper, sliced (or 2 small)
  • 1/4 c. (65ml) water
  • 500 grams / 1 pound Lo Mein, Hokkien, or other medium thickness egg noodles, fresh, prepared per packet

SAUCE:

  • 2 tablespoons dark soy sauce
  • 4 teaspoons cornflour / cornstarch
  • 2 tablespoons soy sauce or light soy sauce
  • 1 teaspoon white sugar (omit if using Mirin)
  • 1 tablespoon Chinese cooking wine or Mirin
  • 1/4 teaspoon white pepper (sub black)
  • 1/2 teaspoon sesame oil, toasted, optional

GARNISH (OPTIONAL):

  • Green onion, finely sliced

DIRECTIONS :

Step 1: To make the sauce, combine the cornflour and dark soy until no lumps remain. Add the rest of the sauce ingredients (soy sauce or light soy sauce, white sugar, Chinese cooking wine, white pepper, and sesame oil).

Step 2: Into a bowl with chicken, pour in 2 teaspoons of the sauce and toss to coat.

Step 3: In a wok or large heavy-based skillet, heat the oil over high heat. Once the oil is smoking, add the onion and garlic. Saute for about 30 seconds.

Step 4: To the wok/skillet, add the chicken. Stir and cook for about a minute until the chicken is white on the outside but still raw inside.

Step 5: Then, add the carrot and capsicum/bell peppers. Continue to cook for another 2 minutes or until the chicken is cooked through.

Step 6: Now, add the noodles, sauce, and water. Toss and cook for additional 30 seconds using 2 wooden spoons.

Step 7: Lastly, add the green onions to the wok/skillet. Toss and cook for a minute more until the noodles are lossy with sauce.

Step 8: Remove from the heat when done and serve the Lo Mein Noodles right away. If desired, garnish with extra green onions. Enjoy!
