I love this lemon butter salmon. It’s super easy to throw together using only a few simple ingredients and ready in no time. Seared in a non-stick skillet for easy flipping, make sure not to disturb the salmon and only flip once halfway done for better result. Serve with rice and your favourite side dishes for an elegant and delicious dinner.

INGREDIENTS :

Sauce:

  • 4 tablespoons butter
  • ¼ c. lemon juice
  • 1 small garlic cloves minced
  • 1 tablespoon freshly chopped parsley

Salmon:

  • 2 tablespoons avocado oil or olive oil
  • 1 teaspoon Old Bay Seasoning or to taste
  • 3 salmon fillets, about 6 ounces each skin on or off

DIRECTIONS :

Sear the Salmon:

Step 1: With Old Bay Seasoning or salt & pepper, season the salmon fillets.

Step 2: Drizzle olive oil in a hot large non-stick pan over high heat, then place the fillets in the pan. Adjust the heat to medium-low and cook for about 5 to 6 minutes, undisturbed, until the fillets are well browned and cooked about halfway through. Flip and continue to cook the fillets for additional 5 minutes until cooked to your desired doneness.

To Make the Sauce:

Step 3: Bring the lemon juice to a boil in a small skillet or saucepan. Once boiling, adjust the heat to low and simmer for about 3 minutes, stirring often.

Step 4: Adjust the heat to very low, then add the cold butter, stirring constantly until the butter has melted. Add the parsley, garlic, salt, and pepper once the butter is halfway melted and continue to cook for a minute more.

NOTES:

  • The cooking time of the salmon fillets varies depending on the thickness of the fish. The salmon fillets are properly cooked when their internal temperature is 140 to 145 degrees F.
  • Fresh salmon has a firm texture, moist appearance, and fresh odour. Keep this in mind when buying salmon. Make sure to store this in the coldest part of your fridge for up to 2 days.
  • Completely thaw frozen salmon before using.
  • To evenly cook the salmon, let it sit on the counter for about 30 minutes until it comes to room temperature.
