HERB ROASTED CHICKEN THIGHS IN CREAMY WHITE WINE SAUCE

These juicy chicken breasts smothered in a rich and creamy sauce will surely make your dinner extra special! Serve them over rice or mashed potatoes. Enjoy!

INGREDIENTS :

  • 3-4 thyme sprigs (leaves only)
  • ½ c heavy cream
  • 1 c chicken stock
  • Salt and pepper to taste
  • 2 tbsp butter
  • 1 medium onion, diced
  • 3 pounds chicken thighs, bone-in, skin-on
  • 1 tbsp flour for thickening the sauce
  • ½ c white wine
  • Italian seasoning (divided)
  • 3 garlic cloves, chopped
  • Salt and pepper
  • 1 tbsp olive oil

  1. Prepare the oven and preheat it to 200 degrees C or 400 degrees F.
  2. Place a large skillet on the stove and turn the heat to medium-high. Add 1 tbsp of olive oil and allow it to become hot.
  3. Sprinkle Italian seasoning, pepper, and salt over the chicken thighs. Rub each well to coat.
  4. Add the chicken thighs into the hot skillet, then sear each side for 5 minutes or until they turn brown. Move them onto a clean plate.
  5. Melt 2 tbsp of butter in the same skillet. Add the onion and sauté for a few minutes until brown.
  6. Add thyme, garlic, and 1 tsp Italian seasoning. Sauté for about a minute or just until aromatic. Add flour, then whisk and cook for a minute to remove the raw taste.
  7. Stir in the wine, then scrape the bottom of the skillet to deglaze it.
  8. Add heavy cream and chicken stock, then stir to combine.
  9. Put the chicken thighs back into the skillet with the sauce, then toss to coat.
  10. Transfer the skillet to the preheated oven to cook the chicken for 35 minutes.
  11. Remove from the oven and sprinkle freshly chopped thyme on top over the chicken thighs. Enjoy!

Notes:

  • Serve this dish over rice, roasted veggies, or mashed potatoes. Don’t forget to spoon the delicious sauce over!
