If you want a simple, fast, and flavour-packed one-pot meal, then this crazy scrumptious creamy Cajun Shrimp Pasta with Sausage is a must!

INGREDIENTS :

  • 2 tbsp Olive oil
  • 6 ounces andouille sausage or smoked sausage (thinly sliced)
  • 1 pound large shrimp (peeled and deveined)
  • 1 tsp Cajun seasoning (or Creole seasoning)
  • 10 oz. fettuccine pasta
  • ½ tsp dried Oregano
  • 1 red bell pepper (thinly sliced)
  • ½ yellow onion (thinly sliced)
  • 4 tsp Cajun seasoning (or Creole seasoning)
  • 2-3 cloves garlic (chopped)
  • 1 tsp brown sugar
  • ½ c. crushed tomatoes
  • 1 c. chicken broth sodium-free
  • ⅔ c. Grated Parmesan
  • 1 c. heavy cream
  • 1 tbsp parsley (chopped)
  • Kosher salt and fresh cracked black pepper (to taste)

DIRECTIONS :

Step 1: In salt, pepper, Cajun seasoning, and oregano toss the shrimp, coating them well.

Step 2: Drizzle the olive oil into the bottom of a hot large skillet over medium-high heat. Then, add the shrimp and cook for about 2 minutes. Flip the shrimp and continue to cook the other side for an additional 1 to 2 minutes. To a plate, transfer the shrimp and set it aside.

Step 3: In the now-empty plate, drizzle a bit more olive oil. Add the sausage and cook for about 4 to 5 minutes until no longer pink and caramelized. Set aside when done.

Step 4: Following the package directions, cook the pasta in a large pot of boiling water until al dente

Step 5: Adjust the heat to medium and add a little more olive oil to the pan. Then, add the onion along with the red bell pepper, Cajun seasoning, brown sugar, and salt. Cook, scraping any browned bits from the bottom of the pan until the onion and pepper have slightly softened. Now, add the garlic and continue to cook for another 30 minutes until aromatic.

Step 6: To the pan, add the crushed tomatoes, chicken broth, and heavy cream. Let everything simmer for a few minutes, stirring often.

Step 7: Stir in the Parmesan to the sauce once it is simmering. Then, add the cooked pasta and sausage. Toss and heat for another 2 to 3 minutes. To taste, season with salt and pepper. Finally, add the shrimp.

Step 8: Remove from the heat when done and serve the Creamy Cajun Shrimp Pasta with Sausage immediately garnished with some chopped parsley. Enjoy!
