- 1 tsp baking soda
- 3 c. all-purpose flour
- ½ tsp ground nutmeg
- 1 ½ c. vegetable oil
- ½ c. brown sugar
- 1 ½ c. granulated sugar
- 2 tsp vanilla extract
- 1 c. walnuts or pecans, coarsely chopped
- ½ tsp salt
Glaze:
- 3 tbsp brown sugar
- 3 tbsp butter
- 3 tbsp granulated sugar
- ¼ tsp vanilla extract
- 3 tbsp heavy cream
DIRECTIONS :
Step 1: Ready a 9 x 11-inch baking pan. Grease, flour, and set aside.
Step 2: Prepare the oven. Position the oven rack in the upper third of the oven. Preheat it to 325 degrees F.
Step 3: In a medium bowl, sift the flour, baking soda, cinnamon, nutmeg, and salt. Then, sift them again.
Step 4: Place the vegetable oil, brown sugar, and granulate sugar in the bowl of a stand mixer with the paddle attachment. Beat until well blended. Add the eggs, one at a time, while the mixer is still running. Then, add the vanilla. Mix well while scraping the bowl.
Step 5: With the mixer running low, gradually add the dry ingredients. Scrape the bowl and mix again.
Step 6: After peeling the apple, core them and slice them into bite-sized pieces. Then, fold the pieces of apple into the batter. Next, fold in the walnuts.
Step 7: Into the prepared pan, pour the batter and evenly spread. Place in the top third of the preheated oven and bake for about 45 to 50 minutes or until a toothpick inserted in the center of the cake comes out clean.
Step 8: To make the glaze, place the glaze ingredients into a small pan. Bring the mixture to a boil while stirring constantly, using a wooden spoon for about 1 minute. Take off the heat and gently pour over the warm cake. Allow the cake to cool before serving if desired. Or slice and serve warm. Enjoy!
