These Raspberry Oatmeal Crumble Bars Are Insanely Delicious

You only need a few pantry staples.

Although these simple bars could be considered breakfast, they can also be used as dessert due to their oatiness. I love treats that are easy to eat at any hour of the day. They are a bit chewy and have a raspberry jammy burst. It takes less than ten minutes to bake them. To put it another way, they are easy to love.

Serves 12
45 minutes

INGREDIENTS :

  • 3/4 cup (1 1/2 sticks) unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats, NOT quick cook or instant
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 (18 oz) jar raspberry jam

DIRECTIONS :

  1. Preheat oven to 350°F and grease an 8-inch square baking dish with nonstick spray. Set aside.
  2. In a large mixing bowl, cream together the butter and sugars with an electric mixer until smooth.
  3. Add vanilla extract, oats, flour, salt and baking powder, and stir to combine.
  4. Press 3/4 of the oat mixture firmly into the bottom of the prepared pan. Spread jam over the top in an even layer. Crumble remaining oat mixture over the top.
  5. Bake until lightly golden brown on top, 30-40 minutes. Let cool completely [probably 2 hours] before slicing and serving.
