Strawberry shortcake cheesecake :
INGREDIENTS:

- ° 80 g unsalted butter
- ° 200 g caster sugar
- ° 500 g of cream cheese (Philadelphia type)
- ° 100 g of biscuits “Small-butter”
- ° 250 g of strawberries (fresh)
- + FOR THE STRAWBERRY COULIS
- ° 200 g caster sugar
- ° juice or zest of half a lemon
- ° 250 g ripe strawberries
INSTRUCTIONS :
- Preheated oven to (180 ° C). Minimize your “Small Butter” cookies to a fine powder using a food processor. Work the butter with a spatula so that it is soft and fold it into the cookie powder. Spread the preparation about 1 cm thick in a springform pan.
- Then wash the strawberries without soaking them, hull them and cut them into pieces then place them on your cheesecake base. Whisk the cottage cheese, sugar and eggs vigorously until you obtain a smooth and homogeneous cheesecake mixture. Pour this preparation over your pieces of strawberries. Bake your strawberry cheesecake for 40 min at th.6 (180 ° C).
- Prepare the coulis that will accompany your cheesecake by mixing together the strawberries, powdered sugar and lemon juice. At the end of cooking, let your cheesecake cool slightly in the refrigerator, then serve it with a generous amount of strawberry coulis.
