Juicy and flavorful pan-seared pork chops smothered in a mouthwatering rich-onion gravy. Throw this dish together any time in less than an hour and serve with your favorite steamed/roasted veggies, cauliflower rice, or even rice for a filling meal that deserves a spot on your regular menu rotation.

INGREDIENTS :

PORK CHOPS:

  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 lb. bone-in pork chops, 1” thick
  • 1/4 tsp fresh ground pepper
  • 1 tsp poultry seasoning or seasoning salt

ONION GRAVY:

  • 3 cloves garlic, minced
  • 1 tbsp unsalted butter
  • 1 large yellow onion, thinly sliced
  • 1/2 tbsp chopped fresh thyme
  • 1/4 c. heavy cream
  • 1/2 c. low sodium chicken broth
  • chopped fresh parsley for garnish
  • pinch of salt

DIRECTIONS :

Step 1: Sprinkle the pork chops with seasoning salt and pepper.

Step 2: In a large skillet, heat the oil and butter over medium-high heat. Add the pork chops to the melted butter and cook for about 5 minutes on each side until golden brown. To a plate, transfer the seared pork chops. Cover and set aside.

Step 3: Add another tbsp of butter to the now-empty skillet. Once the butter has melted, add the sliced onions and season with a pinch of salt. Cook the onions for about 12 minutes, stirring often, until the onions have softened and caramelized. Then, add the garlic along with the fresh thyme. Cook for additional 30 seconds before pouring in the chicken broth. Scrape the browned bits from the bottom of the pan using a wooden spoon. Stir in the heavy cream and let everything simmer for about a minute.

Step 4: To the skillet, add the pork chops back along with the pork juices. Adjust the heat to medium-low and cook further until the meat is cooked through and the sauce has thickened. This takes another 3 minutes.

Step 5: Take the pan off the heat when done. Before serving, garnish the smothered pork chops with some parsley. Enjoy!

Notes:

WW FREESTYLE POINTS: 12

To decrease the pints to 10, use Half & Half instead of Heavy Cream and use extra virgin olive oil in place of olive oil.

TO STORE LEFTOVERS: In an airtight container, place the completely cooled pork chops and store them in the fridge for up to 4 days.
