I love how my kitchen smells whenever I make this Thai Peanut Chicken. Once I come in the door and smell its aroma, I cannot help but droll in anticipation. This recipe is one of my favourite slow cooker recipes. It is super easy to throw together, simply place the ingredients in your slow cooker following the simple steps below and leave. Before you know it you have the best, creamy, and peanut flavour infused chicken. Serve this over noodles for a satisfying meal perfect for your whole family!
This Thai Peanut Butter is a very flavorful dish that is made with only pantry ingredients. This will surely will not make your wallet cry! The best part is, you can make this even with your busy schedule! Tender chicken and zucchini in the most amazing peanut-flavoured sauce, I just cannot say no to this incredible dish!

INGREDIENTS :
- 2/3 c. peanut butter
- 1 pound boneless skinless chicken breasts, cut into 1” cubes
- 2 cloves garlic minced
- 1 c. chicken broth
- 1 c. shredded zucchini
- 1 teaspoon sugar
- 1/3 c. soy sauce
- 1 tablespoon lime juice
- 1 red pepper cut into thin, long strips
- 1 c. chopped cilantro divided
- 12 oz. linguine noodles cooked and drained
- chopped peanuts for garnis
DIRECTIONS :
Step 1: To a slow cooker, add the garlic, peanut butter, broth, chicken, zucchini, soy sauce, sugar, and red pepper. Mix well until combined.
Step 2: Set to cook for 4 to 5 hours on low or 2 to 3 hours on high. Add the lime juice and half cup cilantro half an hour before serving.
Step 3: When done, garnish with the rest of the cilantro and peanuts, then serve the Thai Peanut Chicken immediately over noodles. Enjoy!
