I dreamt of this recipe from my grandmother yesterday, and it was something that brings back memories when I was a child, which I end up tearing a bit just remembering the old times, all those laughter and lessons with my grandma. It is a simple but wonderfully delicious treat to make. During the holidays we pack them in tins and give them as gifts. When I was young, my grandmother scolded me often for playing in the pond outside our house. She’s always asking me to behave like a girl, dress like a girl, stuff like that, but I was stubborn and doing what I wanted. I even wore my father’s jersey short just to annoy her. I mean, I love her, but I was a child and will do the opposite of what people say. I was sent by my parents later when I was a teenager to spend the weekend with my grandmother, and there she asked me to join her in the kitchen because she wanted to try something different. I was intrigued, so I did. To sum it all, she made this Saltine Toffee Cookies, and it was the best thing ever. From then on, I continuously make this recipe. Choose your favorite nuts to top up cookies.
INGREDIENTS :
- 4 ounces saltine crackers
- 1 cup butter
- 1 cup dark brown sugar
- 2 cups semisweet chocolate chips
- ¾ cup chopped pecans
DIRECTIONS :
- Preheat oven 400 degrees F (205 degrees C).
- Line cookie sheet with saltine crackers in a single layer.
- In a saucepan, combine sugar and the butter. Let it boil for 3 minutes. Immediately, pour over saltines and spread to cover crackers completely.
- Bake it for 5 to 6 minutes at 400 degrees F (205 degrees C). Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Then spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.
