INGREDIENTS :
- ¾ cup white sugar
- ⅔ cup salted sweet cream butter, softened
- 2 cups all-purpose flour
- 2 tsp baking powder
- (2) large eggs
- 2 tsp lemon extract
INSTRUCTIONS :
- Preheat oven 400 degrees F (200 degrees C).
- Cream sugar and butter in a bowl using an electric mixer until light and fluffy.
- Add and whisk flour and baking powder in a separate bowl, then gradually beat into creamed butter mixture until just combined.
- Beat eggs, one at a time, into butter-flour mixture until dough is thoroughly mixed and then stir in lemon extract.
- Then drop small scoops of dough onto a baking sheet.
- Bake until cookies spring back when touched for 10 to 12 minutes in the preheated oven.
Note :
- For more flavor, you can add a lemon glaze if you want, or even add lemon zest to make the lemon stand out.
