INGREDIENTS :

FOR THE DOUGH:

  • 2 tablespoons dry active yeast
  • 7 c flour
  • 1/3 c sugar
  • 1 tablespoon oil for the Instant Pot
  • 2 c (480g) hot milk
  • 3 Eggs
  • 1/2 c warm water
  • 1 tablespoon salt
  • 1/2 c (113g) butter, cold

FOR THE FILLING:

  • 1 tablespoon cinnamon
  • 1 c packed brown sugar
  • 3 tablespoons melted butter

FOR THE CREAM CHEESE ICING:

  • 1 tablespoon vanilla extract
  • 2 c powdered sugar
  • 8 tablespoons unsalted butter, softened
  • 8 ounces (225g) cream cheese, room temp

DIRECTIONS :

For the Dough:

  1. Place a small pot on the stove and turn the heat to medium. Add milk and allow it to boil. Immediately remove it from the heat.
  2. Stir in cold butter until well incorporated. Leave it for a few minutes to cool.
  3. In a mixing bowl, add 1 tablespoon of sugar, yeast, and warm water. Stir everything until well blended. Let it rise for 10 minutes.
  4. Transfer the yeast mixture and milk mixture into the bowl of a stand mixer. Add eggs, salt, and the rest of the sugar. Beat everything until well incorporated.
  5. Add flour, then beat again until well combined and thick.
  6. Drizzle a bit of oil into the Instant Pot and spread it evenly.
  7. Put the dough into the Instant Pot. Roll it until coated with oil.
  8. Press the “Yogurt” button on the Instant Pot. Cover and proof the dough for about 20 minutes.
  9. Remove the cover, then knead the dough. Proof for 10 more minutes.
  10. Sprinkle flour onto a flat surface, then place the dough on it. Roll it to about a 1/2-inch-thick rectangle and brush it with melted butter.
  11. Add cinnamon and brown sugar into a mixing bowl. Stir until well blended. Sprinkle the mixture over the dough. Roll it up and slice it into 1-inch cuts. Let them sit for 15 minutes.
  12. Prepare the oven and preheat it to 190 degrees C or 375 degrees F.
  13. Place the rolls in the preheated oven and bake for about 20 minutes.

For the Cream Cheese Icing:

  1. In a mixing bowl, add butter and cream cheese. Beat a few times until well incorporated.
  2. Add vanilla extract and powdered sugar. Beat again to mix.
  3. Remove the rolls from the oven, then pour the icing over and spread it evenly. Let them rest for a few minutes at room temperature.
  4. Serve and enjoy!
