These Easy Zucchini Puffs are superb! I got this recipe a couple of years ago, and I’m still in love with it to this day! I am so excited to share this recipe with you today because I know that you are going to like it! Take those plain zucchinis to the next level with this awesome recipe. This recipe yields 24 servings so everybody gets a bite of these heavenly treats. Enjoy!
INGREDIENTS :
- 1 Egg
- 1 c grated zucchini
- salt and pepper to taste
- ¾ c flour
- ½ c shredded cheddar cheese
- ¾ c milk
- ¾ teaspoon baking powder
- 2 teaspoons Italian Seasoning
DIRECTIONS :
Zucchini:
- Grate the zucchini, then place the pieces over a cheesecloth. Wrap and squeeze to remove extra moisture.
For the Puffs:
- Prepare the oven and preheat to 190 degrees C or 375 degrees F.
- Add baking powder, Italian seasoning, and flour into a mixing bowl. Whisk until well blended.
- In a separate mixing bowl, add milk and egg. Whisk until well incorporated.
- Transfer the milk-egg mixture into the bowl with the flour mixture, then beat until well mixed.
- Add the cheese and shredded zucchini into the batter, then stir until well blended.
- Apply cooking spray to mini muffin pans.
- Fill the pans with the batter.
- Place the pans inside the preheated oven and bake for about 20 minutes or until a toothpick comes out clean after inserting it in the middle.
- Remove Easy Zucchini Puffs from the oven and allow them to rest for a few minutes at room temperature.
- Serve and enjoy!
Notes:
- You can add your preferred seasonings for this recipe.
- Place any leftovers in an airtight container, then place them inside the fridge.
