This easy apple crisp is my favourite fall dessert! It is a decadent dessert with tender apple chunks topped with crisp buttery oat topping. Serve this with a huge scoop of vanilla ice cream and drizzles of salted caramel sauce for a dreamy treat in paradise!
INGREDIENTS :
Topping:
- 1/2 c. old fashioned oats
- 1/2 c. (70 grams) all-purpose flour
- 1/2 c. (110 grams) packed light-brown sugar
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1/3 c. (76 grams) unsalted butter, cold, diced into small cubes
- 1/4 teaspoon salt
Apple filling:
- 3 tablespoons (42 grams) unsalted butter, melted
- 2 pounds Granny Smith apples (at room temperature) peeled, cored, and sliced thin (about 1/8”)
- 1/4 c. (55 grams) light-brown sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1/2 teaspoon ground cinnamon
- 1 pinch salt
- 3 tablespoons water
DIRECTIONS :
Step 1: Prepare the oven. Place the oven rack one level below the centre, then preheat the oven to 375 degrees.
Step 2: Grease an 8 x 8-inch baking dish and set it aside. You can also use a small casserole dish of the same size.
Step 3: Place half cup flour, the oats, half cup brown sugar, 1/2 teaspoon baking powder, 1/4 teaspoon cinnamon, and 1/4 teaspoon salt in a mixing bowl. Mix well for about 30 seconds. Then, add the diced butter. Rub the butter into the dry mixture using your clean fingertips until it formed into small crumbles. Chill in the fridge while getting the filling ready.
Step 4: To make the filling, mix the melted butter and flour in a small mixing bowl until well combined. Stir in the water, lemon juice, and vanilla. Now, add 1/4 c. brown sugar, half teaspoon cinnamon, and a pinch of salt. Mix well until blended.
Step 5: In a large bowl, place the apples and pour the butter mixture over. Toss until the apples are evenly coated. Then, into the prepared baking dish, pour the apple mixture, evenly spreading them around.
Step 6: Over the apples, evenly sprinkle the crumbles. Place in the preheated oven and bake for about 35 minutes or until the top is golden brown and the apples are easily pierced with a toothpick.
Step 7: When done, remove from the oven and let the apple crisp rest for about 10 minutes. Then, serve with a big scoop of vanilla ice cream and a drizzle of salted caramel sauce. Enjoy!
