Coconut Cake with Seven-minute Frosting :
INGREDIENTS :
- 7 egg whites
- 125 g butter
- 150 g flour
- 200 g sugar
- 60 g grated coconut
- 2 sachets of vanilla sugar
- 1 packet of dry yeast
For the icing:
- 2 egg whites
- 150 g icing sugar
- 50 grated coconut
DIRECTIONS :
*For the cake:
- Beat the egg whites. Incorporate one by one while mixing: the melted butter, the sugars, the flour, the coconut and finally the yeast.
- Butter a cake tin, pour the preparation into it and bake for 30 minutes in a hot oven at 180 ° C .
*For the coconut icing:
- When the cake is cool, beat the 2 stiff egg whites, mix in the coconut and icing sugar in any order, the goal being to make a homogeneous preparation.
- Coat the cake with the icing using a spatula. The ideal is to do it on a tray or a board .
- No need to be too manic about smoothing the icing will stretch.
- When the icing has hardened, place the cake on a serving platter!
