This boiled fruit cake is a special dessert. I love sweets, and I cannot leave without them. My top favorite is this boiled fruit cake. It’s super easy to whip up using only a few simple ingredients. Moist cake loaded with fruits with a hint of spice. I have baked too many cakes, but this is the only one that I am keeping on top!
INGREDIENTS :
- 2 large eggs
- 4 ounces butter or hard margarine
- 12 ounces mixed dried fruit (I use a combination of sultanas, raisins, and currants)
- 1 teaspoon mixed spice + 1 teaspoon ground ginger
- 1 teaspoon bicarbonate of soda
- 8 ounces plain flour + 1 teaspoon baking powder and a pinch of salt
- 6 ounces sugar (I use golden caster, but we used to use ordinary granulated)
DIRECTIONS :
Step 1: In a pan with a small mug of cold water (around 6 FL. Ounces or slightly more than a quarter of a pint), place the butter or hard margarine, sugar, mixed dried fruit, bicarbonate of soda, and mixed spice (plus 1 tsp ground ginger). Gently heat until the butter has melted. Then, allow the mixture to boil for about a minute.
Step 2: Turn the heat off and allow the mixture to cool for about 15 minutes, stirring often.
Step 3: Into a greased and lined 2-pound loaf tin, whisk the eggs and flour. Place in the oven and bake for about 1 1/4 hours at 140 degrees C (Gas mark 3). Once a skewer inserted in the center of the cake comes out clean the cake is done. If not, bake for an additional 5 to 10 minutes.
Step 4: Remove from the oven when done and allow the cake to cool on a cooling rack.
Step 5: Wrapped the cake in foil and store for up to 1 week.
