I love this banana bread recipe. It’s the best banana bread recipe I’ve tried. Moist, incredibly delicious, and filling. Perfect for breakfast, afternoon snacks, or even dessert. Enjoy a slice or two with your favorite cup of coffee to jump-start your mornings. You can also spread butter on a warm slice of banana bread – my kids do, and they love every bit of it!
INGREDIENTS :
- 1 stick butter (softened)
- 3 large ripened bananas (peeled)
- 1 egg white
- 1/2 teaspoon vanilla extract
- 1 egg
- 1 teaspoon baking soda
- 1 1/2 c. flour
- 3/4 c. sugar
- 1/2 c. semi-sweet chocolate chips (optional)
- 1/4 c. crushed pecans or walnuts (optional)
- 1 pinch of salt
DIRECTIONS :
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: Place 1 stick of butter in a large microwave-safe bowl and heat in the microwave for about 25 to 35 seconds.
Step 3: Into the bowl with the softened butter, add the ripened bananas, and mash using a fork. Next, add the rest of the ingredients (1 egg, 1 egg white, 1/2 teaspoon vanilla extract, 1 teaspoon baking soda, 1 pinch of salt, 3/4 c sugar, and 1 1/2 c of flour) and mix well using a large spoon. Then, fold in the nuts and/or chocolate chips (optional).
Step 4: Using a nonstick cooking spray, grease a loaf pan. Empty the contents of the bowl into the greased pan. Bake the batter in the preheated oven for about 45 to 50 minutes until done.
NOTES:
- I have tried baking this banana bread in a gas and electric oven. If using gas, baking time is about 45 minutes and around 50 minutes for an electric oven.
- Serve this banana bread for breakfast, afternoon snack, or even dessert. This pairs perfectly with coffee in the morning.
- If desired, you can spread butter on a warm slice of banana bread.
