INGREDIENTS :

  • 1 large Egg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 3/4 c shortening
  • 1/2 teaspoon ground nutmeg
  • 2 1/2 c all-purpose flour
  • 2 teaspoons baking soda
  • 3/4 c packed light brown sugar
  • granulated sugar for rolling cookies
  • 1/4 teaspoon salt
  • 1/2 c molasses

DIRECTIONS :

  1. Add the sugar and shortening into a mixing bowl. Beat until well mixed.
  2. Add the molasses and egg, then beat until well mixed.
  3. In a separate mixing bowl, add baking soda, flour, spices, and salt. Whisk until well mixed.
  4. Add the flour mixture into the bowl with the cream mixture. Stir until well mixed.
  5. Place it inside the fridge to chill for about 1 hour.
  6. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
  7. Line with parchment paper a baking sheet.
  8. Form small balls out of the chilled dough.
  9. Coat each ball with granulated sugar.
  10. Arrange the balls onto the prepared baking sheet. Make sure to leave a space between each cookie dough.
  11. Place them inside the preheated oven and bake for about 8 to 12 minutes or until done.
  12. Remove from the oven and allow the cookies to rest completely at room temperature.
  13. Serve and enjoy!
