Coconut Cake with Seven-minute Frosting :

INGREDIENTS :

  •  7 egg whites
  •  125 g butter
  •  150 g flour
  •  200 g sugar
  •  60 g grated coconut
  •  2 sachets of vanilla sugar
  •  1 packet of dry yeast

  •  150 g icing sugar
  •  50 grated coconut

DIRECTIONS :

*For the cake:

  1. Beat the egg whites. Incorporate one by one while mixing: the melted butter, the sugars, the flour, the coconut and finally the yeast.
  2. Butter a cake tin, pour the preparation into it and bake for 30 minutes in a hot oven at 180 ° C .

*For the coconut icing:

  1. When the cake is cool, beat the 2 stiff egg whites, mix in the coconut and icing sugar in any order, the goal being to make a homogeneous preparation.
