- 140 g flour
- 90 ml lukewarm water (20 ° c)
- 3 g fresh baker’s yeast

- 15 ml of milk
- 20 g fresh yeast
- 125 g flour
- 30 g sugar
- 30 g soft butter
- 5 g salt

DIRECTIONS :
- Make the leaven: crumble the yeast, pour lukewarm water to dilute it, add the flour and mix well. Form a ball, and let riise for one hour in your off oven
- Make the dough, ideally with a robot or a bread machine, if not by hand … courage!
- Put the sourdough in a bowl or the bowl of the food processor. Start working the dough
- Add the milk
- Add the crumbled yeast, then the sugar, the flour (mix each time), and finally the egg yolks. Then add the salt. Work the dough for 3 minutes. It should be very smooth. Then add the soft butter, the money becomes shiny
- Shape into a ball, cover with cling film, and let rise for one hour in your off oven
- The money will double in volume, make pieces of money of identical size, shape balls, a hole in the middle, and enllarge the hole to give the shape of the doughnuts!
