Insanely moist and bursting with flavour, this easy Carrot Cake is to die for! So far the best carrot cake that came through like a dream!
INGREDIENTS :
Cake:
One:
- 1 1/4 c. unsweetened applesauce or oil, this is what my Nana used
- 2 c. granulated sugar
- 3 eggs room temperature
Two:
- 2 c. all-purpose flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
Three:
- 2 c. grated carrots
- 1 c. shredded sweetened coconut
- 1 c. chopped nuts optional
- 1 teaspoon vanilla
- 1 c. Dole crushed pineapple not drained! (use the pineapple in JUICE, not syrup)
Cream Cheese Frosting:
- 1/2 c. butter softened
- 8 ounces cream cheese softened
- 1 teaspoon vanilla
- 1 pound powdered sugar
- top with toasted pecans or coconut if desired
DIRECTIONS :
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Combine the ingredients listed in “One”, then add in the “Two” ingredients, then stir in the “Three” ingredients.
Step 3: Into a lightly greased 9 x 13-inch or two 9-inches pans, or three 8-inches pans, pour the mixture. I would suggest greasing the pans with non-stick baking spray and sprinkle with flour.
Step 4: Place in the preheated oven and bake for about 35 to 40 minutes if using 9 x 13 or 9-inch pans. Or 25 to 30 minutes for 8-inch pans. Do a toothpick test. Once it comes out clean, the cakes are done.
Step 5: Remove the cakes from the oven and allow them to cool for at least 10 minutes in the pan. Transfer to a cooling rack to cool completely.
Frosting:
Step 1: In a bowl, place the butter and cream cheese. Beat until nice and fluffy. Add in the vanilla followed by the powdered sugar. Continue to beat until nice and smooth.
Step 2: Onto a cake plate or stand, invert the cake.
Step 3: Over the cake, apply a generous amount of frosting and spread.
Step 4: Place the second cake layer gently on top and frost. Do this with the third layer (if making three layers).
Step 5: Place in the fridge and chill for an hour for best results.
Note:
If planning on piping the border and adding more frosting decorations on top of the cake, feel free to double the frosting recipe.
