Moist, super soft, and decadent – this salted caramel, chocolate chip cookie bars are my heaven! And the gooey caramel centers are to die for! I always make sure to whip up a big batch and freeze it.
INGREDIENTS :
- 2 large eggs
- 1 c. unsalted butter, softened
- 10 oz. soft caramels, unwrapped
- 14 oz. sweetened condensed milk
- 1/2 c. granulated sugar
- 1 c. packed light brown sugar
- 1 tsp vanilla extract
- 1 tsp baking soda
- 2 c. semisweet chocolate chips
- 2 1/2 c. all-purpose flour
- 1 tsp flaked sea salt
- 1 tsp kosher salt
DIRECTIONS :
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using foil, line a 9 x 13-inch baking dish and generously grease with nonstick cooking spray.
Step 2: Beat the softened butter in the bowl of an electric mixer with the granulated sugar and light brown sugar for about 2 minutes until light and fluffy. Then, add the eggs along with the vanilla, salt, and baking soda. Mix again, scraping the sides of the bowl using a spatula.
Step 3: Adjust the speed to low, then add the flour. Beat well and fold in the chocolate chips.
Step 4: Into the bottom of the prepared baking dish, press half of the cookie dough.
Step 5: Add the sweetened condensed milk and unwrapped caramels to a medium saucepot over medium-low. Stir well until the caramels have melted and you have a smooth filling. Over the cookie dough base, pour the filling and drop on top the rest of the cookie dough into small teaspoon-sized clumps.
Step 6: Place in the preheated oven and bake for about 25 to 30 minutes or until the center of the bar is just set.
Step 7: Remove from the oven when done and sprinkle on top the sea salt flakes. Let the bar cool fully before lifting it out of the pan using the edges of the foil. Slice and keep the bars in an airtight container for up to 3 days at room temperature.
Note:
- You can also freeze these bars for up to a month. Thaw before serving.
