INGREDIENTS :

  • 2 refrigerated rolled pie crusts
  • 2 1/2 cups brown sugar
  • 1/2 cup butter, melted + 1 TBSP
  • 2 1/2 cups light corn syrup
  • 4 tsp. vanilla extract
  • 6 eggs, beaten lightly
  • 2 cups chopped pecans
  • 1 1/2 cups pecan halves

DIRECTIONS :

Step 1 :Pre-heat oven to 425°F. Spray non-stick oil onto the bottom of the dish. Add the eggs, and vanilla extract, and mix well.

Step 2: Combine 2 cups of chopped pecans. Spread half of the mixture on the pie crust. Add the rest of the mixture to the top.

Step 3: Bake the crust for 15 minutes or until it is golden brown. Reduce the heat to 350 degrees Fahrenheit.

Step 4: Combine the remaining ingredients for the pecan pie and pour it over the crust. Add the remaining 1 1/2 cups of pecan halves to the top.

Step 5: Continue baking for 30 minutes. Let cool completely before serving. Warm cobbler with vanilla cream.
