INGREDIENTS :
- 1 White Onion Diced
- 1 pound Chicken Breast
- 2 Cans of White Northern Beans
- 1 10-ounces Can of Rotel
- 1 Can of Whole Kernel Corn
- 1 teaspoon Garlic Powder
- 1 teaspoon Cumin
- ½ teaspoon Cayenne Pepper
- 1 teaspoon Chili Powder
- 1 – 32 ounces Container of Chicken Broth
- 1 teaspoon salt
- 1 teaspoon Black Pepper
- ¼ c. Half & Half or Heavy Cream
- 1 8-ounces Block of Cream Cheese
- Toppings: Cheese, Avocado, Fresh Cilantro, Sour Cream, Salsa, & Tortilla Chips
DIRECTIONS :
Step 1: Place the salt, pepper, cumin, chilli powder, cayenne pepper, and garlic powder in a bowl. Mix well until combined.
Step 2: Into the bottom of a slow cooker, place the chicken breasts and sprinkle with the seasonings.
Step 3: Next, drain the beans and corn.
Step 4: Over the chicken breasts, place the onion, drained beans, drained corn, and Rotel. Add the whole container of chicken broth.
Step 5: Put the lid on and seal. Set to cook for 6 to 8 hours on low until the chicken is tender.
Step 6: Take the chicken breasts out of the slow cooker and shred them using two forks. Then, place it back into the slow cooker. Add the cream cheese along with the half-and-half.
Step 7: Continue to cook for additional 15 minutes on a high setting.
Step 8: When done, serve the white chicken chilli right away with your preferred toppings such as cheese, avocado, sour cream, and more. Enjoy!
