I got this recipe from my mom, and she used to tell me that there is no exact measurement, just go with your guts and adjust to your preference. This is the most refreshing salad. I sometimes add a drizzle of or two of Tabasco for a fire and ice combo. I and my husband have a deck garden, and we enjoy gardening in our free time. We plant not flowers, but crops. Every time we have ripped tomatoes and cucumbers, this recipe is the first thing that comes to my mind. We all love the tangy, rich, and creamy combination of this cucumber salad. You only just need a little of the dressing to not overpower the salad. Anyway, the liquid from the cucumber and tomatoes thins out the dressing to perfection!
INGREDIENTS :
- 2 tsp red wine vinegar
- 1/2 tsp milk (preferably whole or 2%) – optional
- 1 heaping tbsp mayonnaise
- 1 large (or 2 small) ripe, chopped tomato
- 1 large peeled and thinly sliced cucumber
- a pinch of salt and pepper
DIRECTIONS :
Step 1: In a large bowl, add the mayonnaise, red wine vinegar, milk (whole or 2%), salt, and pepper. Mix well until blended.
Step 2: To the large bowl, add thinly sliced cucumber (or 2 small) and chopped tomatoes. Gently toss to coat.
Step 3: Allow the salad to sit for at least 30 minutes or longer.
Step 4: Serve and enjoy!
