This is the best pork loin roast! Juicy and tender with superb flavors! This recipe is a fool-proof recipe, incredibly easy, and guarantees an impressive pork loin roast perfect for entertaining or a fancy dinner.
INGREDIENTS :
PORK LOIN:
- 1 tbsp olive oil
- 3 lbs. pork loin
SPICE RUB:
- 1/2 tsp onion powder
- 1 tsp sweet paprika
- 1/2 tsp dried rosemary
- 1 tsp garlic powder
- salt and fresh ground pepper, to taste
- 1/2 tsp dried thyme
HONEY GARLIC GLAZE:
- 1 tbsp olive oil
- 1/4 c. honey
- 4 cloves garlic, minced
- 1 tbsp Dijon mustard
- 3 tbsp low-sodium, gluten-free soy sauce
VEGETABLES:
- 1 lb. Brussels sprouts, cut in half
- 1 lb. butternut squash, peeled, seeds cleaned out, and cut into 1” cubes (or use pre-cut butternut squash)
- 1 tbsp olive oil
DIRECTIONS :
Step 1: Prepare the oven. Preheat it to 375 degrees F. Using aluminium foil or parchment paper, line a rimmed baking sheet, and set aside. Using paper towels, pat dry the pork loin.
Step 2: Place the paprika, garlic powder, onion powder, thyme, rosemary, salt, and pepper in a small mixing bowl. Mix well until combined.
Step 3: Using cooking spray, lightly spray the pork loin. Then, rub the spice mix on the entire pork loin.
Step 4: Sear the pork loin in olive oil for about 3 to 5 minutes per side until all sides are browned. On the prepared baking sheet, transfer the pork loin, fast-layer side up. Set aside.
Step 5: Mix the garlic, honey, soy sauce, mustard, and oil in a bowl until well blended. Add a little more oil or soy sauce if the mixture is too thick. Set aside 2 tbsp of the sauce for later and brush the rest on the pork loin.
Step 6: Place the baking sheet in the preheated oven and roast the pork loin for about 25 minutes.
Step 7: While the pork loin is in the oven, toss the vegetables with 1 tbsp olive oil and the reserved homey mixture. After roasting the pork loin for 25 minutes, remove it from the oven and add the vegetables around in a single layer.
Step 8: Cover the pork with a piece of foil. Return to the oven and continue to roast for an additional 25 to 30 minutes or until the internal temperature of the pork loin reads 145 degrees F. Halfway through cooking, stir the vegetables.
Step 9: Take the baking sheet out of the oven. With foil, loosely tent the meat and veggies and allow them to rest for about 10 minutes. Before serving, cut the pork into slices. Enjoy with the veggies.

SLOW-COOKER PORK LOIN:
- After seasoning the pork, sear it and transfer it to the slow cooker. Pour in the prepared sauce. Put the lid on and set to cook on low for 4 to 6 hours.
HOW TO MAKE AHEAD:
- Sear the seasoned pork and transfer it to the baking pan. Over the pork, pour the sauce. Cover and store in the fridge for up to 24 hours. When ready to serve, remove from the fridge and roast as directed.
