INGREDIENTS :
- 1.5 lb ground beef
- 1 chopped onion
- 1 pkg taco seasoning mix
- 10 ounces can Rotel not drained
- 2.25 ounces can of sliced black olives
- 15 ounces can of corn drained
- 4 taco size flour tortillas
- 2 c cheddar cheese divided
DIRECTIONS :
- Place a skillet on the stove and turn the heat to medium.
- Add the ground beef and onions. Cook for a few minutes until the beef is brown and the onions are translucent.
- Add the taco seasoning and water. Stir until well combined.
- Cook everything for about 10 minutes.
- Add the corn, olives, and Rotel. Stir until well mixed.
- Apply cooking spray in a 9×13-inch baking dish.
- Arrange the tortillas into the prepared baking dish.
- Add 1/2 of the meat mixture over the tortillas and spread it evenly.
- Sprinkle 1 cup of cheese on top.
- Repeat the process until everything is arranged in layers ending with cheese.
- Prepare the oven and preheat to 175 degrees C or 350 degrees F.
- Place the baking dish inside the preheated oven and bake for 20 minutes or until done.
- Remove from the oven and allow it to cool for a few minutes at room temperature.
- Serve with your preferred toppings. Enjoy!
