SWEET AND SOUR SHRIMP

This dish with shrimp, green peppers, pea pods, and carrots in a scrumptious sweet and sour pineapple sauce is a pretty simple dish that you can easily whip up in minutes. Serve this over rice for an easy and quick-filling meal perfect for busy days or any time!

INGREDIENTS :

  • 2-3 tbsp oil
  • 1 pound medium or large shrimp – shelled and deveined
  • 1 1/2 c. sweet peppers
  • 1 can pineapple slices (reserve the juice)
  • 2 c. pea pods
  • 1 c. chopped onion
  • 1 carrot – optional

Marinade for Shrimp:

  • 1 tbsp Soy Sauce
  • Pepper to taste
  • 1 tbsp Oyster Sauce

Sweet and Sour Sauce:

  • 3 tbsp brown sugar
  • 1 c. juice from the canned pineapple
  • 3 tbsp water
  • 3 tbsp vinegar (white or rice vinegar)
  • 2 tbsp soy sauce
  • 2 tbsp cornstarch mixed with water
  • 2 tbsp oyster sauce

DIRECTIONS :

Step 1: Place the shrimp in a bowl with soy sauce and oyster sauce. Toss to coat the chicken. Marinate the chicken while preparing the vegetables.

Step 2: In the meantime, chop the onions into small pieces. Into small, very thin circles, chop the carrots. Into strips, slice the sweet peppers, slicing in half if the pieces are very big.

Step 3: Next, drain the pineapple, reserving the juice. Into large chunks, cut the pineapple. Take the strings off the pods if needed.

Step 4: Whisk the sauce ingredients until well combined and set aside.

Step 5: To a saute pan, add the oil. Once the oil is hot, add the shrimp to the pan and cook for about 2 to 3 minutes, making sure not to cook the chicken all the way. On a plate, transfer the shrimp.

Step 6: To the pan, add the onions, carrots, and sweet pepper strips. Cook for a few minutes until they begin to wilt and the onion is transparent. Next, add the pineapple and pea pods. Continue to cook for another 2 minutes, stirring occasionally.

Step 7: Return the shrimp to the pan. Stir the sauce and pour this into the pan. Stir well and cook until the sauce has thickened.

Step 8: Remove from the heat when done and serve the sweet and sour shrimp right away over rice. Enjoy!
