INGREDIENTS :
- 3 tbsp vegetable oil
- 1 1/2 lbs beef stew meat
- 1 14-ounces can of beef broth
- Salt & pepper
- 2 tbsp cornstarch
- 1 c. water, divided
- 1 envelope beefy onion soup mix (like Lipton)
DIRECTIONS :
Step 1: In a large skillet, heat the oil over medium-high heat.
Step 2: Sprinkle the stew meat with salt and pepper. Add to the hot oil and sear for about 3 to 4 minutes until done. Set aside.
Step 3: Place the beef broth, onion soup mix, and 1/2 cup water in a medium-sized stockpot. Mix well until blended. Then, add the stew meat and stir. Put the lid on and cook for about 1 to 2 hours over low heat. To prevent the meat from getting tough, do not let the mixture reach a full boil.
Step 4: To a small bowl, whisk the cornstarch with half a cup of water until smooth. Pour this into the pot and stir well. Simmer for about 1 minute until the broth has thickened into a gravy.
Step 5: Remove from the heat when done and serve the stewed beef with gravy right away over white rice or egg noodles. Enjoy!
