Ingredients:
- 2 lbs skirt steak, thinly sliced
- 2 tbsp cumin
- 2 tbsp paprika
- 1 tbsp salt
- 2 tbsp garlic powder
- 1 tbsp dried oregano
- 1/2 orange juice
- 1/4 c lime juice
- 2 large onions, one thinly sliced and one whole
- 2 bell peppers, thinly sliced
- 2 red bell peppers, thinly sliced
- 2 tbsp olive oil
- Tortillas, warm
- Cilantro
- Lime wedges
Directions:
- Step 1: Prepare the oven and preheat to 218 degrees C or 425 degrees F.
- Step 2: Add the steak, paprika, cumin, garlic powder, dried oregano, and salt into a large mixing bowl.
- Step 3: Add the lime juice and orange juice. Use your hands to massage the steak until well coated with the sauce.
- Step 4: Slice the onion into two and put 1 slice in the middle of a rimmed baking sheet.
- Step 5: Poke the middle of the onion with a bamboo skewer.
- Step 6: Arrange the steak one by one over the onion, then top everything with the other half of the onion.
- Step 7: Place the peppers and sliced onions onto the baking sheet beside the steak. Drizzle olive oil over.
- Step 8: Place the baking sheet inside preheated oven and bake for 40 minutes or until done.
- Step 9: Remove the steak from the oven and slice it into small bites.
- Step 10: Fill each tortilla with the meat slices and mixed veggies.
- Step 11: Garnish each serving with fresh lime juice and cilantro.
- Step 12: Serve and enjoy!
