I have not heard about Spinach Balls until my friend wrote about them on her page. I was hesitant to try it at first because I have the pickiest eaters! Once they see something green, my kids instantly think that they are eating veggies and they don’t like veggies so much! One day my friend brought me these Spinach Balls, and it was love at first bite! I made it the next day, and to my surprise, my kids love every bit of these spinach balls! The superb combination of spinach and stuffing mix is irresistible!

INGREDIENTS :

  • 1/2 cup butter, melted
  • 2 small onions, very finely chopped (I use a food processor)
  • 2 (10 ounces) packages frozen spinach, thawed & well-drained
  • 6 eggs, beaten
  • 2 teaspoons garlic salt
  • 1/2 cup Parmesan cheese
  • 1 teaspoon black pepper
  • 2 1/4 cups stuffing with herbs (I use Pepperidge Farm)

DIRECTIONS :

Step 1: Start draining the spinach very well.

Step 2: Place all the ingredients (butter, onions, spinach, eggs, garlic salt, Parmesan cheese, black pepper, and stuffed with herbs) in a mixing bowl. Mix well until blended.

Step 3: Into about 1-inch balls, shape the mixture, then place them on a baking sheet greased with non-stick cooking spray.

Step 4: Place the spinach balls in a preheated 350 degrees F oven and bake for about 20 minutes.

Step 5: Remove from the oven when done and serve the spinach balls hot or at room temperature. Enjoy!

NOTES:

  • Using your hands, thoroughly squeeze out the water to drain the spinach. Alternately, you can place the spinach between layers of paper towels and press to squeeze the water out.
  • You can freeze the spinach, either baked or unbaked.
  • Thirty minutes before baking, remove the frozen balls from the freezer and reheat for about 8 to 10 minutes at 350 degrees F.
  • Before baking the unbaked frozen balls, take them out of the freezer thirty minutes prior, then bake for about 20 minutes at 350 degrees F.
