I am making my favourite smothered pork chops again tonight. Juicy and tender chops in a terrific, rich onion gravy. Pair this with your preferred side dishes for a complete meal that your family will love!
INGREDIENTS :
PORK CHOPS:
- 2 tbsp olive oil
- 1 lb. bone-in pork chops, 1” thick
- 1 tsp poultry seasoning or seasoning salt
- 2 tbsp unsalted butter
- 1/4 tsp fresh ground pepper
ONION GRAVY:
- 3 cloves garlic, minced
- 1 tbsp unsalted butter
- 1 large yellow onion, thinly sliced
- 1/2 tbsp chopped fresh thyme
- 1/4 c. heavy cream
- 1/2 c. low sodium chicken broth
- chopped fresh parsley for garnish
- pinch of salt
DIRECTIONS :
Step 1: Sprinkle salt and pepper over the pork chops.
Step 2: In a large skillet, heat the oil and butter over medium-high heat. Add the pork chops to the skillet once the oil is hot and the butter has melted. Sear the pork chops for about 5 minutes on each side until golden brown. If needed, cook the pork chops in batches. To a plate, transfer the pork chops when done and cover to keep warm.
Step 3: Add another 1 tbsp butter in the same skillet. Once the butter has melted, add the sliced onions to the skillet and sprinkle with salt. Cook the onions while stirring often for about 12 minutes until tender and caramelized. Then, add the garlic and fresh thyme. Continue to cook for another 30 seconds.
Step 4: To the skillet, pour in the chicken broth. Scrape the bottom of the pan using a wooden spoon to release the brown bits. Next, stir in the heavy cream and simmer for a minute more.
Step 5: Add the pork chops back to the skillet and the pork juices. Then, adjust the heat to medium-low. Cook for additional 3 minutes or until the chops are fully cooked and the sauce has thickened.
Step 6: Take the skillet off the heat when done. Serve the smothered pork chops right away garnished with parsley. Enjoy!

Sub heavy cream with half&half and use extra virgin oil in place of olive oil to reduce the points down to 10.
