INGREDIENTS :
- 1 clove garlic, minced
- 1 small onion, chopped
- 1/2 c chopped bell pepper, green or red
- 2 large russet potatoes, cut into 1-inch cubes
- 1/4 tsp dried parsley
- 1/4 tsp salt and pepper
- 1 1/2 tsp paprika
- 14 oz. smoked sausage, sliced thin
- 2 tbsp vegetable oil
- 1/4 chicken stock
DIRECTIONS :
- Put a large skillet on the stove over medium heat.
- Add olive oil and let it sizzle.
- Add the smoked sausage, then cook for a few minutes until brown.
- Transfer the sausage onto a clean plate.
- In the empty skillet, add the potatoes and cook until they turn brown as well.
- Add the garlic, pepper, and onions. Sauté until fragrant and soft.
- Add the chicken stock, then scrape the bottom of the skillet to get the browned bits.
- Cover the skillet and simmer for a few minutes.
- Remove the cover, then add the spices. Stir until well blended.
- Add the sausages back into the skillet. Toss until well combined.
- Serve hot and enjoy!
