These heavenly treats are so good that this was probably my fifth time making them this week alone! My kids could not get enough of these Almond Joy Cookies! INGREDIENTS :
- 1 Egg
- 1/3 c sugar
- 1/2 c unsalted butter softened (1 stick)
- 1 1/8 c all-purpose flour (1 cup plus two tablespoons)
- 1/2 tsp baking soda
- 1/3 c brown sugar
- 1 1/2 c semi-sweet chocolate chips
- 1 tsp vanilla extract
- 3/4 c sliced almonds
- 1 c sweetened coconut flakes (shredded coconut)
- 1/4 tsp salt
DIRECTIONS :
- Prepare the oven and preheat to 175 degrees C or 350 degrees F.
- Add baking soda, salt, and baking soda into a mixing bowl. Whisk until well blended.
- In a mixing bowl, add sugars and butter. Beat until creamy.
- Add egg and vanilla, then beat again until well blended.
- Transfer the dry mixture into the bowl with the cream mixture, then stir until well blended.
- Add the almond slices, coconut flakes, and chocolate chips. Stir until just incorporated.
- Line cookie sheets with parchment paper.
- Spoon the mixture and drop each onto the prepared cookie sheets. Make sure to leave a small space between each cookie dough.
- Place them inside the preheated oven and bake for about 12 minutes or until done.
- Remove the cookies from the oven and allow them to rest at room temperature for a few minutes.
- Serve and enjoy!
