I love this old-fashioned stroganoff. I can easily make this scratch using just basic ingredients. Enjoy a creamy, very comforting, and classic dish right at your home with this easy slow cooker beef stroganoff recipe!
INGREDIENTS :
- 16 oz. cremini baby Bella mushrooms, sliced
- 1 1/2 lbs boneless sirloin steak cut into thin (1/2” thickness) 2 x 1 inch strips
- 1 tsp dried dillweed
- 1/2 tsp garlic powder
- 1/2 tsp ground black pepper
- 1/2 tsp onion powder
- 3 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 1/2 c. low-sodium beef broth divided
- 1/4 c. cornstarch
- 1 c. plain whole-milk Greek yoghurt does not use nonfat or it will curdle
- 1 tsp kosher salt
- Fresh parsley or thyme optional for serving
- 8 oz. whole wheat egg noodles penne, rotini, or similar noodles work well also
DIRECTIONS :
Step 1: Using a nonstick spray, grease the bottom of a 6-quart or larger slow cooker. Place the sirloin in the slow cooker and sprinkle with salt, dill, black pepper, garlic powder, and onion powder. Toss to coat the meat.
Step 2: Next, add the mushrooms to the slow cooker along with 1 c. beef broth, Worcestershire, and Dijon. Put the lid on and set to cook for 2 to 3 hours on high or 5 to 7 hours on low or until the beef is completely cooked and tender. For firmer mushrooms, add them to the slow cooker about halfway through cooking.
Step 3: To make a slurry, whisk the cornstarch with the rest of the half c. broth until the lumps are gone. Stir this into the slow cooker. Replace the lid and continue to cook for another 20 minutes on high. Then, stir in the Greek yogurt. Put the lid back on and cook for 10 minutes more on high.
Step 4: Following the package directions, cook the stroganoff until done. Drain and add to the slow cooker. Stir to coat. Alternately, you can pile into bowls, then ladle the stroganoff on top. Serve right away garnished with some fresh thyme or parsley. Enjoy!
