INGREDIENTS :
- 2 pounds ground chuck
- ½ cup plain bread crumbs
- 1 cup and 1 tablespoon zesty bloody Mary mix
- 1 egg
- 1 small onion, minced
- 1 small bell pepper, minced
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- 1 teaspoon salt
- ½ cup of ketchup
DIRECTIONS :
- Step 1: Preheat oven to 350 degrees, the slightly grease a baking dish using a non-stick cooking spray.
- Step 2: In a small bowl, mix the bread crumbs and the cup of bloody Mary mix well, leave it for about 3 to 5 minutes, for the bread crumbs to absorb the liquid.
- Step 3: Combine the meat, moistened bread crumbs, egg, onion, bell pepper, garlic powder, pepper and salt in a large bowl, mix them well until they are just combined. (do not overmix)
- Step 4: Pour the mixture into the baking dish, so that it forms a loaf at the center of the dish.
- Step 5: Add and mix the ketchup and the remaining bloody Mary mix well in a bowl and spread it on top of the meatloaf.
- Step 6: Allow to bake uncovered for 50 to 60 minutes, until it is cooked. Remove and leave it for about 5 minutes before slicing and serving.
