I can’t get enough of this incredible pasta recipe! It is so good! Who doesn’t like creamy pasta, right? What I love the most about this dish are the scallops! Scallops over pasta with creamy sauce, how awesome is that? Give this one a try and you have yourself a meal to remember. Enjoy!
INGREDIENTS:
- 1 (16 ounces) package angel hair pasta
- ¼ cup butter
- 2 cloves garlic, minced
- 2 pounds sea scallops, rinsed and patted dry
- 3 tablespoons chopped fresh basil
- 2 tablespoons chopped fresh flat-leaf parsley
- 2 tablespoons fresh lemon juice
- salt and freshly ground black pepper to taste
- ½ cup heavy cream
- 1 tablespoon grated Parmesan cheese to taste
DIRECTIONS :
Step 1: Place a large pot on the stove and turn the heat to high.
Step 2: Pour in salted water and bring it to a boil.
Step 3: Add in the angel hair pasta and cook for 4 to 5 minutes, uncovered, or until al dente’. Drain the water and rinse the pasta with cold running water to stop the cooking process.
Step 4: Place a skillet on the stove and turn the heat to medium.
Step 5: Add butter and allow it to melt.
Step 6: Add minced garlic, stir, and cook for 1 minute or until aromatic.
Step 7: Add the sliced scallops, parsley, and basil. Stir and cook for 2 to 3 minutes or until the scallops are slightly tender. Do not overcook because the scallops will become chewy.
Step 8: Add the lemon juice and stir. Season with salt and pepper to taste. The cream is optional. It will make the sauce thicker. Simmer for 1 minute or until heated through.
Step 9: Place the angel hair pasta on a serving platter. Spread the sauce on top. Sprinkle with Parmesan cheese.
Step 10: Serve and enjoy!
