I am loving these salted caramel chocolate chip cookie bars more every day! The gooey caramel centres are to die for. Make sure to not skip these bars, they are heavenly good and addicted!1
INGREDIENTS :
- 2 large eggs
- 1 c. unsalted butter, softened
- 2 1/2 c. all-purpose flour
- 1/2 c. granulated sugar
- 1 c. packed light brown sugar
- 1 tsp vanilla extract
- 2 c. semisweet chocolate chips
- 10 oz. soft caramels, unwrapped
- 14 oz. sweetened condensed milk
- 1 tsp flaked sea salt
- 1 tsp kosher salt
- 1 tsp baking soda
DIRECTIONS :
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using foil, line a 9 x 13-inch baking dish and generously coat with nonstick cooking spray.
Step 2: Place the softened butter with both sugars in a bowl. Beat using an electric mixer for about 2 minutes until light and fluffy. Then, add the eggs, vanilla, salt, and baking soda. Beat again, scraping the sides of the bowl using a spatula.
Step 3: Adjust the speed of the mixer to low, then add in the flour. Beat until incorporated, then fold in the chocolate chips.
Step 4: Into the bottom of the prepared baking dish, press half of the cookie dough.
Step 5: Add the sweetened condensed milk and unwrapped caramels in a medium saucepot. Let the caramel melt over medium-low heat, stirring until smooth. Over the cookie dough base, pour the filling.
Step 6: On top of the caramel filling, drop the rest of the cookie dough in small teaspoon-sized clumps. Place in the preheated oven and bake the bars for about 25 to 30 minutes or until the middle is just set.
Step 7: Remove from the oven when done and sprinkle the bars with sea salt flakes. Let the bars cool fully. Using the foil, lift the bars from the pan and cut. Keep the bars in an airtight container and store them at room temperature for up to 3 days.
Notes:
You can freeze these bars if desired and thaw them before eating.
