INGREDIENTS :
- 3 tablespoons butter
- 1 c heavy cream
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 6 ounces of baby spinach
- 1 c Parmesan cheese, grated
- 1 pound salmon skinless and boneless – one piece or multiple pieces
- salt and pepper to taste
- 8 ounces uncooked pasta I use campanelle
- 2 tablespoons parsley, chopped
DIRECTIONS :
- Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
- Add the pasta and a bit of salt, then cook for a few minutes until al dente. Drain and rinse with cold water to stop the cooking process.
- Place a pan on the stove and turn the heat to medium.
- Add butter and allow it to melt.
- Add the onion, then sauté for about 4 minutes or until soft.
- Add the salmon, then cook for about 5 to 7 minutes or until done. Make sure to break it to turn into flakes.
- Add the spinach, then cook until wilted completely. This usually takes about a minute or two.
- Add the garlic, Parmesan cheese, heavy cream, pepper, and salt. Stir until well blended. Simmer for a few minutes.
- Add the drained pasta and freshly chopped parsley. Toss until well combined. Make sure that the pasta is well coated with the delicious sauce.
- Sprinkle grated Parmesan cheese and more parsley on top to garnish.
- Serve right away and enjoy!
