These delicious meatballs are made with ground beef and rice. Flavorful porcupine meatballs simmered in a simple easy homemade red sauce. INGREDIENTS :

  • 2 tbsp canola oil
  • 1 lb lean ground beef
  • 1/2 c. long-grain white rice, uncooked
  • 15 oz. tomato sauce
  • 2 tbsp light brown sugar
  • 2 tsp Worcestershire sauce
  • 1/3 c. chopped onion
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 1 c. water, divided
  • 1 tbsp parsley chopped (for garnish, optional)
  • 1 tsp salt
  • 1/2 tsp black pepper

DIRECTIONS :

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: Combine the tomato sauce, 1/2 cup water, brown sugar, and Worcestershire sauce in a medium bowl until the sugar has dissolved. Set aside.

Step 3: Add the rice, half cup of water, onion, salt, garlic powder, black pepper, and paprika in a large bowl. Mix the ingredients using a spatula until well mixed.

Step 4: To the rice mixture, add the ground beef and canola oil. Mix well until the beef has broken down and everything is combined.

Step 5: Scoop 1 to 2 tbsp meat mixture using a spoon and roll it into a ball. In a 9 x 13-inch baking dish, place the shaped balls an inch apart.

Step 6: Over the meatballs, pour the prepared sauce. Gently shake the baking dish to distribute the sauce.

Step 7: Place in the preheated oven and bake for about 30 minutes, covered with foil. Uncover and continue baking the meatballs for an additional 30 to 35 minutes or until completely cooked.

Step 8: Remove from the oven when done and serve the porcupine meatballs right away garnished with some chopped parsley. Enjoy!
