PIZZA LASAGNA

I present to you my family’s new obsession! This pizza lasagna blew my kids away. If you want another delicious weeknight dinner that you can throw together in minutes, then this pizza lasagna is a must! You can even make this ahead for an easy and quick meal perfect for busy days.

INGREDIENTS :

Sauce:

  • 1 yellow onion chopped
  • 2 tablespoons olive oil divided
  • 3 garlic cloves minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 29-ounces cans of tomato sauce
  • 2 teaspoons basil dried
  • 2 teaspoons oregano dried

Meat filling:

  • 8 ounces mushrooms chopped
  • 1.25 lbs Italian seasoned ground turkey

Lasagna:

  • 2 eggs slightly beaten
  • 30 ounces ricotta cheese
  • 1/2 c. chopped Italian parsley
  • 6 ounces pepperoni
  • 9 cooked lasagna noodles cooked
  • 4 c. mozzarella shredded
  • 1 teaspoon salt
  • 1 teaspoon pepper

DIRECTIONS:

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: In a large pot, heat 1 tablespoon of oil over medium heat. Once the oil is hot, add the onion to the pot and season with 1 teaspoon each of salt and pepper. Cook for about 5 minutes, then add the garlic. Continue to cook for another minute.

Step 3: To the pot, pour in the tomato sauce. Add the oregano and basil, then simmer for about 15 minutes.

Meat filling:

Step 4: In a large skillet, heat 1 tablespoon of olive oil. Add the ground turkey once the oil is hot. Break the meat as it cooks.

Step 5: To a plate, transfer the cooked turkey when done.

Step 6: In the same skillet, add the mushrooms and cook until tender. When done, transfer on the same plate as the meat.

Lasagna prep:

Step 7: In a mixing bowl, place the ricotta, eggs, salt, pepper, and chopped Italian parsley. Mix well until combined.

Step 8: Spread 1/4 cup of tomato sauce on the bottom of a 13 x 9-inch baking dish. Place 3 lasagna noodles on top to cover the tomato sauce. Over the noodles, spread 1/3 of the ricotta mixture in an even layer. On top, spread some of the tomato sauce, then cover with 1/3 of the mozzarella cheese.

Step 9: On top, layer about 1/3 of the meat/mushroom mixture and top with a layer of pepperoni.

Step 10: Do the same layers twice (3 more noodles and ricotta, mozzarella, tomato sauce, meat/mushrooms, and pepperoni).

Step 11: Bake in the preheated oven for about 20 to 30 minutes or until the cheese has melted and bubbly.

Notes:

  • For this recipe, I recommend using a high-side 9 x 13-inch lasagna baking dish to make sure you complete the layers.
  • Or you can add the rest of the layers in a 9 x 9-inch baking dish.
