Ingredients:
- 4 large green bell peppers
- 16 oz baby bells mushrooms, sliced, rough chopped
- 1 medium sweet onion, sliced, rough chopped
- 3/4-lbs good quality deli roast beef, I bought a medium-rare one
- 3 tbsp butter
- 2 cloves garlic, minced
- Seasoned Salt & Seasoned Pepper to taste
- 8 thicker slices of Provolone Cheese, (can sub shredded Mozzarella)
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Slice the tops of the bell peppers and remove the seeds inside.
Step 3: Slice the bell peppers into small cuts.
Step 4: Slice the mushrooms and onion as well.
Step 5: Cut the roast beef a bit, then set aside.
Step 6: Apply cooking spray on a baking dish.
Step 7: Arrange the bell peppers on the bottom of the prepared baking dish.
Step 8: Put a slice of cheese below each bell pepper.
Step 9: Place a skillet on the stove and turn the heat to medium.
Step 10: Add the butter and allow it to melt.
Step 11: Add the onion, garlic, chopped pepper, and mushrooms. Cook for 20 minutes or until they caramelize.
Step 12: Add in the roast beef and sprinkle salt and pepper to taste. Cook the roast beef for another 5 minutes or until brown.
Step 13: Fill each bell pepper with the meat mixture and cover the baking dish.
Step 14: Place the baking dish inside the preheated oven and bake for about 20 minutes.
Step 15: Remove the cover and top of each stuffed bell pepper with a slice of cheese.
Step 16: Put the baking dish inside the oven and bake for another 10 minutes or until the cheese has melted completely.
Step 17: Remove the Stuffed Peppers from the oven and let them cool at room temperature for a few minutes.
Step 18: Serve and enjoy!
