I love this oven-baked chicken Parmesan. It is super easy and quick to make. Since the chicken is baked, it is healthy with the most crispy Parmesan crust!
INGREDIENTS :
- 2 chicken breasts About 1 lb of chicken total
- 2 tbsp olive oil
- 1 egg
- 1 c. panko bread crumbs
- 1/2 tsp garlic powder
- 1 tsp dried oregano
- 1 c. marinara sauce
- 1 ½ c. shredded mozzarella
- 1/2 c. Parmesan cheese fresh grated
- 2 tbsp minced parsley optional, for garnish
- 1 tsp kosher salt
- 1/2 tsp black pepper
DIRECTIONS :
Step 1: Using foil, line a baking sheet, then brush with olive oil. Prepare the oven. Position the oven rack to the second from the top space, then preheat the oven to 400 degrees F.
Step 2: In half, slice the chicken breast, then pound each slice to even thickness. Cut the chicken breast through the middle and open it like a book. To make two equal-sized pieces, cut the chicken breast all the way.
Step 3: In a gallon-sized zip-top bag, place the chicken breasts in an even layer. Seal the bag and pound the chicken breasts with a meat pounder or rolling pin to an even thickness. Alternately, you can put the chicken breasts between two layers of cling wrap.
Step 4: Pat the chicken breasts with a paper towel to dry. Sprinkle with salt and pepper.
Step 5: Combine the panko bread crumbs, grated Parmesan cheese, salt, pepper, garlic powder, oregano, and black pepper in a shallow dish. Then, beat the egg in a different shallow dish.
Step 6: Into the egg, dip one chicken breast, then dredge into the bread crumb mixture, making sure to completely coat the chicken in the crumb mixture. To help the crumbs stick to the chicken, gently press the chicken with your hands. On the prepared baking sheet, transfer the chicken breast. Do the same for the rest of the chicken pieces.
Step 7: In the preheated oven bake the chicken for about 15 minutes or until completely cooked.
Step 8: Turn the chicken on the other side, then pour 1/4 cup marinara sauce on top of each chicken and top with cheese. Return to the oven and broil for about 2 to 3 minutes or until the cheese has melted and bubbly and the chicken edges are browning.
