  • 8.75 ounces of canned corn, not drained
  • 4 ounces canned chopped green chilies, not drained
  • 1-ounce taco seasoning
  • 1-pound lean ground beef
  • 1 c medium salsa
  • 1 c yellow onion, diced
  • 2 c instant rice
  • 1 teaspoon dried chives
  • 3 c shredded mozzarella and cheddar cheese
  • 10.5 ounces of condensed chicken broth
  • 1/2 c Heinz chili sauce
  • 2 c water

DIRECTIONS :

  1. Put a large pan on the stove and turn the heat to medium-high. Add butter and allow it to melt.
  2. Add the ground beef, then cook for a few minutes until crumbly and brown.
  3. Add the onions, then sauté for a few minutes until soft. Discard any accumulated fat, then add water and chicken broth. Stir everything until well blended.
  4. Stir in the instant rice until fully covered with the broth mixture. Simmer for a few minutes until the rice is cooked through.
  5. Add taco seasoning, chili sauce, salsa, green chilis, and canned corn. Stir everything until well incorporated. Simmer for a few more minutes. Remove the pan from the heat.
  6. Stir in 2 cups of shredded cheese until well blended.
  7. Scatter the rest of the shredded cheese and dried chives over the dish.
  8. Let the dish rest for a few minutes at room temperature until the cheese has melted completely.
  9. Serve warm. Enjoy!
