Hello there, friends! I hope you are all doing well on this fine day! This recipe I am sharing with you today is my ultimate comfort food! This Mexican Shredded Beef is so good that you would want to eat it pretty much all the time! I am 100 percent sure that you are going to love this! Feel free to add more ingredients if you wish. INGREDIENTS :
- 2 tbsp ground ancho chilis
- 1 large onion, sliced
- 1 tbsp oregano
- 1 tbsp ground chipotle chilis
- 1 tsp ground cumin
- 1 tbsp lime juice
- 3 lbs. beef roast (such as chuck, the eye of round, etc.)
- 1/4 c orange juice
- 2 tsp salt
- 1 tsp pepper
- 1/2 tsp cinnamon (optional)
- 2 tsp cocoa powder (optional)
- 4 cloves garlic, chopped
DIRECTIONS :
- In a mixing bowl, add cumin, ancho chilis, cinnamon, chipotle chilis, oregano, cocoa, salt, and pepper. Stir until well blended.
- Sprinkle the mixed seasonings over the beef, then rub it well until well coated.
- Put the meat into the slow cooker.
- Add the rest of the ingredients into the slow cooker with the meat.
- Cover the slow cooker, then cook the meat for about 8 hours or until the meat is fork-tender.
- Remove the beef and onions from the slow cooker.
- Use two forks to shred the meat into small cuts.
- Remove the fat and place it into a pan together with the juice.
- Place the pan on the stove and turn the heat to medium-high.
- Add the sauce, then simmer for a few minutes until the volume of the sauce reduces.
- Remove the pan from the heat, and then add the shredded beef. Stir until well mixed.
- Serve hot and enjoy!
