Enjoy the cold weather with this very comforting Hungarian Goulash with tender chunks of beef, onions, and tomatoes in a rich paprika seasoned broth. A savoury beef stew or soup that is perfect to serve with a side of bread or Biscuits. Incredibly delicious with the most inviting aroma!

INGREDIENTS :

  • 2 onions, diced
  • olive oil cooking spray, or 2 tablespoons olive oil
  • 3 garlic cloves sliced
  • 2 pounds (950 grams) stewing beef, trimmed of fat, cubed
  • ½ tsp cayenne pepper (optional – use if you like a bit of spice)
  • 2 cups (500ml) beef stock (low sodium broth)
  • 2 tbsp sweet Hungarian paprika
  • 14 oz. (400 grams) chopped tomatoes
  • 1 tsp caraway seeds
  • Sour cream to serve (optional)
  • 2 red bell peppers, sliced
  • Salt and pepper to season
  • 3 carrots, roughly chopped
  • 3 potatoes, peeled and cubed (optional)
  • 1 tsp salt

DIRECTIONS :

Step 1: pat fry the beef using paper towels and sprinkle with salt and pepper.

Step 2: Ready the oven and preheat it to 160 degrees C or 325 degrees F.

Step 3: Heat the olive oil in a pot over medium heat. Add the onions once the oil is hot and cook until clear. Then, add the garlic, caraway seeds, and season with salt. Continue to cook for a couple of minutes more until fragrant.

Step 4: Now, add the beef and cook further until all sides are brown.

Step 5: Take the pot off the heat and stir in the paprika. Return the pot to the stove and add the carrots, tomatoes, and beef stock. Put the lid on and simmer for about an hour.

Step 6: Uncover and add the potatoes. Continue to cook for an hour, covered.

Step 7: Then, add the peppers and cook for 30 minutes more. Adjust the seasoning according to taste.

Step 8: Top with sour cream and serve with some crusty bread. Enjoy!
