My favourite dinner of all time! With the sweetness of honey and a bit of tang from the lime, this delicious Honey Lime Shrimp and Broccoli is a delight every time! Unfussy, super easy, and perfect for a quick dinner during busy days. Feel free to use any of your fave vegetables in place of broccoli if desired. And it is still going to be perfect!
INGREDIENTS :
- 1.5 lbs medium shrimp (peeled and deveined)
- 1/4 c honey
- 1/3 c soy sauce
- Juice of 1 lime
- 3 large garlic cloves (minced)
- 1 tablespoon butter (or use olive oil)
- 2 c steamed broccoli (use “Publix “steam in the bag”)
DIRECTIONS :
Step 1: Add the honey, soy sauce, lime juice, and garlic in a small bowl. Whisk to combine.
Step 2: Set aside 1/3 cup of the sauce for later.
Step 3: To the bowl, add the shrimp with the remaining of the marinade. Place in the fridge to marinate for at least 15 to 20 minutes.
Step 4: In the meantime, steam the veggies. For this recipe, I used Publix “steam in bag” veggies. I just put this in the microwave until I need it. And if making this dish with rice, ready that too.
Step 5: In a skillet, melt the butter over medium-high heat. Once the butter has melted, add the shrimp and discard the marinade. Cook the shrimp for a minute on each side.
Step 6: To the pan, add the steamed broccoli with 1/3 cup of the reserved sauce and cook for another 2 minutes.
Step 7: When done, remove from the heat.
Step 8: Enjoy with rice and a bit of squeezed lime juice on top.
Note:
Feel free to use any of your favourite vegetables.
