INGREDIENTS :
Italian seasoning (divided)
- 3-4 thyme sprigs (leaves only)
- ½ c white wine
- 1 medium onion diced
- 3 pounds chicken thighs bone-in, skin-on
- ½ c heavy cream
- 2 tbsp butter
- Salt and pepper
- 3 garlic cloves chopped
- 1 tbsp flour for thickening the sauce
- Salt and pepper to taste
- 1 c chicken stock
- 1 tbsp olive oil
DIRECTIONS
- Prepare the oven and preheat to 200 degrees C or 400 degrees F.
- Place a large skillet on the stove and turn the heat to medium-high.
- Add 1 tbsp of olive oil and allow it to become hot.
- Sprinkle Italian seasoning, salt, and pepper over the chicken thighs, then rub each until well coated.
- Add the chicken thighs into the hot skillet and sear each side for 5 minutes or until they turn brown. Move the chicken thighs onto a clean plate.
- In the empty skillet, add 2 tbsp of butter and allow it to melt.
- Add the onion and sauté for a few minutes until caramelized.
- Add the garlic, 1 tsp Italian seasoning, and thyme. Sauté until aromatic.
- Add 1 tbsp of flour, then whisk and cook for a minute to remove the raw taste.
- Pour in the wine, then stir until well blended. Make sure to scrape the bottom of the skillet to get the browned bits.
- Add the heavy cream and chicken stock, then stir until well blended. Add salt and pepper to season.
- Bring the chicken thighs back into the skillet and spoon the delicious sauce over until well coated.
- Transfer the skillet inside the preheated oven and cook for another 35 minutes or until done.
- Remove from the oven and garnish with freshly chopped thyme.
- Allow the chicken to rest for a few minutes to incorporate all the flavours.
- Serve with rice or mashed potatoes. Enjoy!
